Ingredients Beef vegetable soup
- Dry bail – 2 teaspoon
- Dry thyme – 1.5 teaspoon
- Rosemary crushed – 1 teaspoon
- Oregano – 1.25 teaspoon
- Sugar – 3 teaspoon
- Beef bouillon – 1 tablespoon
- Chuck roast in bite size – 1.5 lbs
- Salt – as per your taste
- Black pepper – 2 teaspoon
- Flour – ½ cup
- Olive oil – 4 tablespoons
- Onion chopped – 1 large
- Celery chopped – 1.25 cup
- Carrot chopped – 1.25 cup
- Garlic minced – 4 cloves
- Tomato paste – ½ can
- Petite diced tomatoes – 14.5 oz
- Bay leaves – 2 no.
- Lemon juice – 3 tablespoons
- Beef broth – 7 cups
- Frozen peas – 1 cup
- Fresh corn – 1.75 cup
- Fresh green beans( remove tips) – 1.5 cup

Directions for beef vegetable soup
Step 1.
Take a small mixing bowl and put all seasoning like dry basil, dry thyme, crushed rosemary, oregano, beef bouillon and sugar according to the quantity described in the ingredients.
Step 2.
Mix all the seasoning well with a spoon. And set it aside.
Step 3.
Take a large bowl and put sliced meat in it. You can use any kind of meat but it should be in bite-size pieces.
Step 4.
Sprinkle salt and black pepper powder over the meat and mix well with the hands.
Step 5.
After mixing sprinkle ½ cup of flour on the meat and mix well. Mixing should be like that a coat of flour on every piece of meat.
Step 6.
Take a pan and place it on flame and put 2 tablespoons of olive oil in it.
Step 7.
Put some pieces of coated meat piece in the oil, there should be space between Avery pieces of the meat in the pan. Roast these pieces of meat until a perfect brown colour is not achieved.
Step 8.
After roasting remove this meat from the pan and keep it aside. Rost all the meat with this process.
Step 9.
Put 2 tablespoons olive oils in the pan again and put chopped onion in it and cook it for some time until it changes its colour.
Step 10.
Now add celery, and carrots mix them and cook them for 3 minutes.
Step 11.
Add garlic and tomato paste in it and mix well. The tomato paste will provide a good Colour to the recipe.
Step 12.
Add 2 cans of petite tomato in it also add all the seasoning which we prepared earlier. Mix all the ingredients well.
Step 13.
Add lemon juice, bay leaves and 7 cups of beef broth in it and mix all of them well.
Step 14.
Now add roasted meat in it and place the lid on the pan and let it boil on high flame. After starting boiling reduces the flame and cook for 1 hour.
Step 15.
After one hour put potatoes and green beans in it. Taste for the salt if you want to add more the add in it. Again cover the pan with the lid and cook for 30 minutes on medium flame.
Step 16.
After 30 minutes add frozen peas and fresh corn in it and cook covered for 15 minutes.
After 15 minutes your beef vegetable soup is ready. Garnish it with chopped parsley. Serve it in the bowl. This will be the perfect choice of soup for Christmas.
