- Carrots grated – 2 cups / 225g
- Olive oil – 3 tablespoons
- Onion sliced – 1 cup / 130g

- Ground black pepper – ¼ teaspoon
- Ground Cinnamon – ¼ teaspoon
- Bay leaves – 2 no.
- Water – 2.25 cups / 525ml
- Raisins – ¼ cup / 35g

Wash the rice with water and soak it for 25 minutes before cooking.
Put a pan on flame. Transfer the cashews to the pan and Roast them for 3 minutes. After roasting keep them aside.

Cut the raisins and keep aside them.
After cooking the rice add cooked carrots, roasted cashews, and cut raisins on the surface of the rice.
