- Dry red lentils(soaked) – 1 cup
- Squash (cut into cubes) – ½ kg
- Olive oil – 3 tablespoons.
- Onion (chopped) – 1 cup
- Ginger (crushed) – 1 tablespoon
- Garlic cloves (minced) – 4 no
- Tomato puree – ½ cup
- Turmeric powder – 1 teaspoon
- Ground cumin – 1 teaspoon
- Ground coriander – 1 teaspoon
- Cayenne pepper – ¼ teaspoon
- Vegan vegetable broth – 4 cups
- Salt – as per taste
Garnish
- Black pepper crushed- ½ teaspoon
- Lemon juice – 2 teaspoon
- Olive oil – 2 tablespoons

Step 1
Soak red lentils for 25 minutes before cooking. And cut Squash into cubes.
Step 2.
Take a pan and put 3 tablespoons of olive oil and let it warm. And put onion and 1 Teaspoon salt in a pan and cook until it starts to change color.

Add 1 teaspoon of garlic and 1 teaspoon of ginger in it. And cook for 1 minute.

After adding tomato puree to the pan and mix well.

Now add spices like turmeric powder, ground cumin, ground coriander, and Cayenne pepper. And mix it well and cook for 1 minute until fragrant.
