- Mirin – 500 ml
- Water – 500 ml
- Rock sugar – 80g
- Ginger sliced – 2 teaspoon
- Chicken breast – 3 / 750g
Drunken chicken broth
- Poaching liquid
- Chillies sliced in length – 4 no
- Ginger sliced 3 cm – 1 tablespoon
- Shaved gula melaka – 1.5 teaspoon
- Rice wine vinegar – 1.5 teaspoon
- Salt – 1 pinch
Bruised salad
- Raw peanuts – ¼ cup
- Shrimp dried and soften in water – ¼ cup
- Cherry tomatoes – 4 no.
- Mangoes small sliced – ½ cup
- Trimmed green beans – ½ cup
- Birds Eye chilli – 1
- Mixed green herbs leave ( parsley, mint, dill) – 1 cup
- Rock sugar – 2 tablespoons
- Salt – 1 pinch
- Fish sauce – 3 tablespoons
- Lemon juice – 4 tablespoons

Instructions for Drunken Chicken 2.0 Recipe
Step 1.
Preheat the oven to @180 degrees Fahrenheit.
Step 2.
Wash the chicken breast gently and then clean and dry it with a paper towel.
Step 3
Remove the skin of the chicken breast and place it on the baking paper and sprinkle the salt over it and fold the baking paper. Do it for all the other two chicken breast skins.

Step 4.
Place all the folded chicken breast skins in a lined tray and cook them until they become crispy. It will take 25 to 30 minutes.

Step 5.
Take a large saucepan and put wine, mirin water sliced ginger and rock sugar.
Step 6.
Place this pan on the flame and let it boil. Stir continuously to dissolve the sugar.

Step 7.
When it starts boiling add skin removed chicken breast in it and turn off the heat.

Step 8.
Cover the lid of the saucepan and let it poach for 20 minutes.
Step 9.
After 20 minutes remove the chicken breast from the saucepan and let it cool.

After cooling shred the chicken. And set aside. Also, take out the breast skins from the oven and break in small chips.

Step 1.
For the drunken chicken broth place the poaching liquid on the flame again and let it simmer and sliced chillies and ginger.

Step 2
Let it simmer for 20 minutes. After 20 minutes add gula melaka, rice wine vinegar and a pinch of salt.

Step 3.
Stir properly and then set it aside but keep warm.
Bruised salad
Step 1.
Roast the peanut in a tray for 15 minutes or until they get brown.
Step 2.
With the help of a mortar and pestle make a paste of dried shrimp with a light pound.
Step 3.
Now add some cherry tomatoes and lightly bruise the tomatoes.

Step 4.
Transfer all the paste to the bowl and add the other ingredients like green beans, bird’s eye chilli, sliced mangoes, and chopped green herb leaves. Mix them well.
Step 5.
Take a little bowl and add Rick sugar in it and also add fish sauce and a pinch of salt in it and mix until the sugar gets dissolves.

Now add the sugar and sauce mixture to the salad bowl. And mix all of them properly.
